Morchella, true morels, are edible sac fungi, distinguished by their honeycomb appearance in the network of ridges of their caps. Morels are prized by gourmet & amateur cooks, but can be toxic if consumed raw or undercooked. Wild morels favor temperate climates, and can be found and harvested in damp deciduous forests as early as March throughout the northern hemisphere. To harvest sustainably, use a knife to cut at the base of the stem, leaving the root intact so that it may sprout for future seasons.
